Easter Lunch: Southern Style

With Easter just around the corner I’ve been tasked with the job of creating a delicious menu for the family to enjoy. I’ve never been a huge fan of ham but for some reason last year I decided to make one. It was a massive success and it really was the star of the 2014 Easter Lunch. That being said, this years menu will also host a gorgeous spiral ham as the centerpiece.

The first weekend of Spring means bright, flavorful produce so I’ve selected a combination of peas, carrots, tangerine, raspberries, herbs and bell peppers to round out the sweetness of the maple glazed spiral ham. Pair this menu with a dry Rose or Riesling (Austrian is best) and you have a meal that will make your family oh and ah in happiness.

Baked Ham with Maple Mustard Sauce

Parmesan Herb Rolls

Carrot-Ginger Puree

Spring Pea Orzo Salad

Fruit Cheesecake Tarts

For the decor I always go with a gorgeous floral centerpiece. It’s simple and I can use it in the house after the party to bring in some color. I’ve never done one using eggs as a visual accent within the vase but I wanted to try this year. Just remember – if you are doing this do not use raw eggs! Yellow yolk floating around in a vase of flowers doesn’t seem very appetizing.
